Feel Good About Indulging
I am always asked for healthy options for dessert and it is a real challenge to provide a balance between tastes good and good for you. No one wants a muselix crust with bland filling! But they do want anti-0xidants, healthy fats and a sweet fix.
Here are my three latest desserts, all created to meet that “Healthy and Delicious” expectation. They can be ordered by calling 269-547-0339
Matcha Mochi Bon Bon
Inspired by my recent article ” Umami-The Fifth Dimension of Flavor“ a gluten free, vegan, soy free nugget of triple anti-oxidant rich Green Tea Mochi (Japanese rice jelly with Matcha green tea, sugar) dipped in Callebaut Bittersweet Chocolate dusted with Sweet Matcha Tea.

Xocolatyl Truffle
Inspired by the Mayan’s use of chocolate in a spicy peppered drink and the early Spanish recipes for what we now refer to as “hot chocolate”. Vegan and no added sugar; Bittersweet Callebaut chocolate and Silken Tofu Ganache with Teleloapan Mole and a toasted Almond, Annatto and Sea Salt Crust

Devilishly Good Food with Blueberry Buttercream
This was inspired by the dessert served by Rustica at the recent Chocolate Soiree held by Wellspring (see my blog “EK Goes to the Chocolate Soiree” for details). I chose Guittard cocoa for a robust chocolate essence and Organic yogurt to create a moist yet light cake, frosted with a local blueberry buttercream (when I serve this next it will have a lovely little lemon zest curl on top!). Created for a surgeon’s office grand opening- I think it’s going to be a hit!

These chocolate desserts were huge hits, I’ve had orders for them and people are raving, I hope to offer some at the local Farmer’s Market this summer- now that I have access to a commercial kitchen!
